Today, I am sharing my recipe for lasagna roll-ups.  This is a classic Nelson Family weeknight meal which you can adapt toward your family’s preferences.  Just a few ingredients is all you need to throw this one together.  Serve with garlic bread and a side salad and you have dinner in 30 minutes.

An easy weeknight recipe that can be tailored to your family's likes and dislikes.

Lasagna Roll-Ups Weeknight Meals
Instructions
  1. Cook lasagna according to package. Meanwhile, brown sausage or ground beef and drain off excess grease. Add spinach to meat and stir occasionally until wilted. Let cool, briefly. In mixing bowl, combine sausage or beef with spinach, ricotta, parmesan cheese, egg, garlic and salt and pepper. Mix well. Drain lasagna noodles and lay each flat on waxed paper. Spoon some of the meat and cheese mixture on each noodle and spread leaving about 1/2 inch at each end. Roll up and place in 9 x 13 baking dish. Continue until all mixture and noodles are used. Spoon some spaghetti sauce over each roll up and pour the remaining sauce in the bottom of the pan. Bake for 15 minutes until cheese is melted.
