Weeknight chili! You probably have most of these recipes in your home, already. I like to keep the ingredients on hand to make when my family is in the mood for chili. Serve over spaghetti or with rolls and you have a hearty, yummy weeknight meal.

Instructions
  1. Heat oil in a large stock or soup pot until sizzling. Saute celery, scallions, green pepper, onion and garlic for about 5 minutes. Add the ground beef and brown. Drain off excess grease/fat. Add chili powder, tomato paste, crushed tomatoes and water and bring to a boil, then lower heat and simmer for 30 minutes. Add the canned beans (including juices in can) when you have 15 minutes left for cooking time. Serve over spaghetti or with rolls.
