Weeknight  Meals – Beef Stroganoff

Preparing a delicious, yet quick and/or easy weeknight meal for your family can be stressful.  So many recipes have a ton of ingredients, many you might not keep in your pantry. Others take hours to prepare or cook. This Beef Stroganoff recipe is quick and easy, yet oh-so-delicious!  Our family loves it and requests it at least once a month.  I serve it with rolls to sop up the yummy sauce. It’s been modified from a Paula Deen recipe (salt has been reduced and other small modifications).

I look for the stew meat or meat cubes on sale and stock up keeping them in freezer for a quick meal.  I also buy the cream of mushroom soup and broth/stock when it is on sale.  Both are used frequently in my house, so I always have them on hand.

For a creamier version, you can add a few ounces of cream cheese. When you add the sour cream and cook down until it melts in with the cream cheese and sauce.

I love to take recipes that I find in cookbooks or online and modify them to my family’s tastes.  I wasn’t always that confident, but through the years, I have learned that no one will die and the recipe won’t be ruined if I use a little creative license when cooking.  Do you do that? or do you stick to the recipe exactly as it is?

Beef Stroganoff
  1. Sprinkle the steak strips with meat seasoning, and then dust with flour. In a large skillet, quickly brown them on both sides in the olive oil and butter. Remove the steak from the pan. Add the onion slices and mushrooms to the pan drippings. Saute for a few minutes, until the onion is tender. Sprinkle with 1 teaspoon flour. Put the steak back into the pan with the onion and mushrooms. Add the mushroom soup and beef broth. Cook over low heat for about 30 minutes, covered. Adjust seasoning to taste, adding salt and pepper, as needed. Stir in the sour cream the last few minutes, right before you serve. Serve over cooked egg noodles.
